An intimate Hong Kong bar that helped bring agave spirits into the mainstream of Asian cocktail culture. Founded by Jay Khan, COA combines a serious tequila and mezcal collection with approachable drinks and informal hospitality.

    The Story

    Origin

Jay Khan opened COA in 2017 after developing a deep interest in Mexico's agave spirits. Its name refers to the long-handled tool used to harvest agave.

    Philosophy

Make a specialist spirits category accessible through conversation, tasting and cocktails rather than ceremony.

    Why Important

Three consecutive first-place finishes in Asia's 50 Best Bars, from 2021 through 2023, made COA a major international reference for Hong Kong's independent bar scene and for agave-focused hospitality.

    Differentiation

COA has a tightly defined subject but a broad welcome. Its identity rests on agave knowledge and relationships with the category, not simply a Mexican visual theme.

    Guest Experience

Guests can explore tequila and mezcal neat or encounter them through cocktails that use contrasting fruit, spice and savoury flavours. Staff guidance is an important part of the experience.

    Design Philosophy

A warm, rustic setting supports the focus on agave, keeping the experience closer to a convivial neighbourhood bar than a formal tasting room.

    Design & Architecture

    Lighting

    Low, warm lighting.

    Materials

    Timber and textured masonry.

    Architecture

A compact street-level venue on Central's sloping pedestrian streets.

    Design Language

    Rustic, intimate and deliberately informal.

    Interior Design

Textured surfaces, timber and closely arranged seating create a warm setting for conversation and tasting.

    Graphic Identity

The name anchors the brand in the agricultural origins of agave spirits.
