Zaiyu Hasegawa's Den brings warmth, humour and personal attention to Japanese tasting-menu dining. Beneath its playful signatures sits serious seasonal cooking, making it one of Tokyo's most influential alternatives to fine-dining formality.

    The Story

    Origin

Zaiyu Hasegawa opened Den in Jimbocho in 2008 after training in traditional Japanese cuisine. The restaurant moved to Jingumae in 2016.

    Philosophy

Hospitality is treated as a direct relationship with each guest. Humour and informality are deliberate tools for making technically accomplished dining feel welcoming.

    Why Important

Den demonstrated that Japanese fine dining could be internationally influential without relying on solemnity or rigid ceremony. Its hospitality model is as significant as its cooking.

    Differentiation

Den makes emotional generosity and humour central to its identity, while retaining a recognisably Japanese culinary structure.

    Food Philosophy

The menu adapts the seasonal logic of kaiseki while allowing unexpected ingredients, visual jokes and familiar comfort-food references. Signatures such as Dentucky Fried Chicken sit alongside vegetable-led and rice dishes.

    Guest Experience

A tasting menu unfolds through personal exchanges, playful presentation and attentive service. The mood is convivial without abandoning the discipline expected of a destination restaurant.

    Design Philosophy

The room supports interaction with the team rather than enforcing distance between kitchen and guest.
