Founded by Jorge Vallejo and Alejandra Flores, Quintonil offers a contemporary reading of Mexican ingredients in an intimate Polanco setting. Its cooking gives vegetables, herbs and regional food knowledge the same attention usually reserved for luxury proteins.

    The Story

    Origin

Jorge Vallejo and Alejandra Flores opened Quintonil in 2012, bringing together culinary development and a strong emphasis on dining-room hospitality.

    Food Philosophy

Native plants, seasonal produce and traditional preparations are reworked with precision, acidity and textural contrast.

    Guest Experience

A detailed tasting menu presents Mexican biodiversity through both recognizable flavors and less familiar ingredients.

    Design Philosophy

An intimate setting keeps the restaurant focused on the relationship between kitchen, dining room and guest.

    Design & Architecture

    Understated contemporary design.

    Interior Design

The relatively intimate scale encourages close attention to the meal and service.
