Rasmus Munk's Alchemist expands the restaurant into a form of multidisciplinary theatre. Food, performance, moving images and social commentary unfold across a lengthy sequence of impressions, with a monumental projection dome providing its best-known setting.
Munk opened the original, smaller Alchemist in Copenhagen in 2015. The much larger Refshaleøen restaurant followed in 2019, with backing from entrepreneur Lars Seier Christensen.
Its concept of holistic cuisine treats the entire visit, including architecture, sound, imagery and human interaction, as part of the meal.
It broadened Copenhagen's international culinary identity beyond New Nordic cooking, establishing the city as a centre for large-scale experiential gastronomy.
Alchemist makes unusually ambitious use of theatrical production and explicitly social themes within a fine-dining framework.
Technical experimentation supports dishes that may address environmental damage, food systems or ethical questions. Provocation is integrated with flavour rather than confined to the presentation.
A multi-hour journey typically comprises around 50 impressions, including food and non-culinary elements. It asks for sustained attention and a willingness to engage with challenging subjects.
A sequence of contrasting spaces establishes a dramatic progression, culminating in an enveloping dome where projected imagery changes the atmosphere.
Architectural lighting and dome-scale projections are integral to the narrative.
