A landmark of contemporary American fine dining overlooking Madison Square Park. Eleven Madison Park helped establish New York as a centre for elaborate tasting menus and highly choreographed hospitality, then challenged luxury-dining conventions with its 2021 plant-based transformation.
The Story
Origin
Danny Meyer opened Eleven Madison Park in 1998. Daniel Humm joined as executive chef in 2006, and Humm and Will Guidara purchased the restaurant in 2011. Humm became sole owner in 2019.
Philosophy
Dining is treated as a complete composition of cooking, room, service and storytelling rather than a sequence of dishes alone.
Why Important
Its influence reaches beyond cooking into service culture, restaurant storytelling and the definition of luxury. The plant-based transition made it a focal point in debates about fine dining’s environmental and cultural direction.
Differentiation
The combination of an imposing Art Deco setting, international culinary recognition and a willingness to make major conceptual changes distinguishes it from more conservative fine-dining institutions.
Food Philosophy
The kitchen built its reputation through technically exacting contemporary cuisine. Its 2021 move to a plant-based menu became a prominent test of whether vegetables, grains and legumes could carry the expectations associated with luxury tasting menus.
