Fine Dining in Hong Kong · Cantonese

Signed by The HBB Editorial Board

A landmark Cantonese dining room at Four Seasons Hotel Hong Kong, celebrated for seafood, intricate dim sum and polished service. Its international recognition helped establish Cantonese cooking as a central part of the global fine-dining conversation.

    The Story

    Origin

Opened with Four Seasons Hotel Hong Kong in 2005. Under Chan Yan Tak, it became the first Chinese restaurant to receive three Michelin stars, in the inaugural Hong Kong and Macau guide for 2009.

    Philosophy

Present Cantonese hospitality at the highest hotel-service standard without displacing the cuisine's emphasis on freshness, balance and technical precision.

    Why It Matters

An essential reference for the international recognition of Chinese fine dining and Hong Kong's influential hotel-restaurant culture.

    Differentiation

Its significance comes from combining deeply established Cantonese craft with the consistency and international visibility of a major luxury hotel.

    Food Philosophy

Seafood, dim sum, barbecue and carefully judged sauces demonstrate the breadth of Cantonese technique. Luxury ingredients support, rather than replace, exact cooking.

    Guest Experience

An expansive hotel setting, attentive service and Victoria Harbour views frame both elaborate dinners and dim sum lunches.

    Design Philosophy

A contemporary luxury dining room that places the harbour view and the table at the centre of the experience.

    Design & Architecture

    Lighting

Daylight is a defining feature at lunch, with softer illumination for dinner.

    Furniture

Upholstered dining chairs and formally dressed tables.

    Architecture

A harbour-facing restaurant within the Four Seasons hotel tower.

    Design Language

Restrained contemporary luxury with Chinese references.

    Interior Design

An understated dining room arranged to take advantage of broad water views.
