Asia's 50 Best Restaurants
Ranked No. 1 in the inaugural Asia's 50 Best Restaurants list. · 2013
Yoshihiro Narisawa's flagship translates Japanese forests, coastlines and agricultural traditions into an unusually personal form of fine dining. It is a defining Tokyo restaurant for understanding how contemporary Japanese cooking can extend beyond established formats.
After training in Europe and running La Napoule in Odawara, Yoshihiro Narisawa opened Les Créations de Narisawa in Tokyo in 2003. The restaurant subsequently adopted the shorter NARISAWA name.
Narisawa's concept of innovative Satoyama cuisine draws on the relationship between Japanese communities and the landscapes that sustain them. Environmental responsibility is part of the culinary argument rather than a separate theme.
NARISAWA helped establish contemporary Japanese fine dining as an internationally legible category beyond sushi and classical kaiseki. Its influence makes it a strong anchor for a Tokyo restaurant library.
Its distinctive contribution is a coherent ecological vocabulary, linking fine-dining technique to Japanese landscapes and producer relationships.
Japanese ingredients and seasonality are interpreted through techniques developed across European and Japanese cooking. Dishes frequently evoke ecosystems, from woodland soil to coastal waters, without being confined to conventional kaiseki.
A highly orchestrated tasting menu combines precise service with dishes that may feel more like landscape studies than familiar restaurant courses.
The restrained dining environment keeps attention on the food, its presentation and the stories behind individual ingredients.

An understated setting that gives complex dishes and tableside presentation visual priority.
