The Smithfield institution that made nose-to-tail eating an internationally influential restaurant philosophy, pairing uncompromising British cooking with deliberately plain surroundings.
Opened in 1994 in a former smokehouse near Smithfield Market, St. JOHN brought Fergus Henderson's cooking together with Trevor Gulliver's wine and hospitality expertise and co-founder Jon Spiteri.
Respect the whole animal, preserve the pleasures of British food and remove distractions from eating and drinking.
St. JOHN helped reshape contemporary British cooking and inspired chefs worldwide to reconsider whole-animal use, culinary heritage and the relationship between simplicity and quality.
Its authority comes from a remarkably consistent point of view. Dishes often dismissed as old-fashioned became the basis of a globally influential modern restaurant language.
Offal, less fashionable cuts, seasonal vegetables, traditional puddings and excellent bread sit alongside simply handled fish and meat. Roast bone marrow with parsley salad became its defining dish.
The restaurant is convivial rather than ceremonious, with a bar and bakery contributing to the sense of a working food institution rather than a staged dining concept.
White walls, utilitarian furnishings and the retained character of the building make a deliberate argument against decorative luxury.
Simple wooden dining furniture.
Painted masonry, timber and white table linen.
A former smokehouse close to London's historic Smithfield meat market.
Utilitarian, restrained and intentionally undecorated.
White-painted spaces preserve an industrial character, with minimal ornament and a clear separation between bar and dining areas.
A recognisable pig motif reinforces the restaurant's whole-animal identity.
