Via Carota is the West Village trattoria of chefs Jody Williams and Rita Sodi, named for the street in Florence where Sodi once lived. There are no reservations taken lightly and no shortcuts in the kitchen; the cacio e pepe and the insalata verde have become New York institutions in their own right.
