    Two Michelin stars

Coque first received its second star at its former Humanes de Madrid location in the 2016 guide. · 2016

The Sandoval brothers transformed a family restaurant in Humanes de Madrid into a major contemporary dining destination in the capital. Coque combines culinary research, a serious wine programme and a choreographed progression through distinct hospitality spaces.

    The Story

    Origin

Coque traces its origins to the Sandoval family’s restaurant in Humanes de Madrid, established in 1977. Brothers Mario, Rafael and Diego developed its culinary and service ambitions before relocating it to central Madrid in 2017.

    Philosophy

The restaurant presents hospitality as a collaboration between kitchen, cellar and dining room, with each brother responsible for a distinct part of the experience.

    Why Important

Coque connects the Madrid region’s family-run culinary traditions with the capital’s contemporary destination-dining culture. Its relocation illustrates how a regional institution can evolve without abandoning its foundational identity.

    Differentiation

Coque gives wine and front-of-house craft unusually visible roles within an ambitious chef-led restaurant.

    Food Philosophy

Mario Sandoval combines Spanish culinary inheritance with research into ingredients, preservation and extraction. Roast suckling pig provides a direct link to the family restaurant’s roots.

    Guest Experience

The tasting experience moves guests through settings associated with drinks, wine, the kitchen and the dining room, rather than keeping the entire occasion at one table.

    Design Philosophy

A sequence of differentiated spaces turns the restaurant into a journey, making architecture and interiors active components of the meal.

    Design & Architecture

    Lighting

Varied lighting helps distinguish the stages of the guest journey.

    Architecture

A substantial central-Madrid restaurant organised around a multi-space guest itinerary.

    Design Language

Theatrical contemporary luxury with differentiated rooms.

    Interior Design

Jean Porsche’s interiors give the bar, cellar and dining areas distinct identities while maintaining a coherent sense of occasion.
