Founded in 1725, Botín is a landmark of Madrid’s dining history, celebrated for Castilian roasts and its centuries-old setting near Plaza Mayor. Its importance rests on culinary continuity as much as its internationally recognised longevity.

    The Story

    Origin

Established in 1725 by French cook Jean Botín and his wife, the business later passed to a nephew, giving rise to the name Sobrino de Botín. The González family took over in the twentieth century.

    Philosophy

Preservation, rather than reinvention, defines the restaurant. Its appeal comes from maintaining a recognisable relationship between place, cooking and service.

    Why Important

Botín is one of Madrid’s most recognisable gastronomic landmarks. Its literary associations, including its appearance in Hemingway’s The Sun Also Rises, connect the restaurant to the city’s broader cultural history.

    Differentiation

Few restaurants combine such extensively documented longevity with a culinary speciality that remains central to their everyday operation.

    Food Philosophy

The kitchen centres on Castilian roasting traditions, particularly suckling pig and lamb cooked in a wood-fired oven, alongside an established repertoire of Spanish dishes.

    Guest Experience

Guests dine across intimate historic rooms in a busy, internationally visited institution. The experience combines traditional roasts with the atmosphere of old Madrid.

    Design Philosophy

The historic building and accumulated character provide the identity, rather than a contemporary design concept.

    Design & Architecture

    Lighting

Warm, traditional lighting suited to the small-scale rooms.

    Furniture

    Traditional wooden dining furniture.

    Materials

Brick, timber, ceramic tiles and plaster.

    Architecture

A multi-level historic building on Calle de Cuchilleros, close to Plaza Mayor.

    Design Language

Historic Castilian tavern and dining house.

    Interior Design

Compact dining rooms, a vaulted cellar, decorative tiles and traditional detailing preserve the feeling of an older Madrid.

    Graphic Identity

Heritage-led lettering and imagery foregrounding the restaurant’s name and founding date.
