Dabiz Muñoz’s radically personal tasting-menu restaurant is a defining institution of contemporary Madrid. Elaborate compositions, unexpected cultural references and theatrical presentation turn fine dining into a deliberately unpredictable experience.
Muñoz opened DiverXO in Madrid in 2007 after working in London. It developed from a small independent restaurant into an internationally influential fine-dining destination, subsequently moving to the NH Collection Madrid Eurobuilding.
The restaurant treats creative freedom as its organising principle, favouring intensity, surprise and a recognisable authorial voice over conventional luxury codes.
DiverXO helped reposition Madrid as a destination for globally influential experimental dining. Its attainment of three Michelin stars marked a major milestone for the city’s contemporary restaurant scene.
Its distinction lies in Muñoz’s highly individual culinary language, rather than in a straightforward fusion of national cuisines.
Spanish ingredients and culinary memories intersect with techniques, seasonings and references from across Asia. Dishes are layered, technically demanding and conceived as successive encounters rather than a conventional meal.
A long, highly orchestrated tasting menu asks guests to surrender control of the meal’s rhythm and direction. Service and presentation are integral to the compositions.
Surreal imagery and an intentionally unconventional setting extend the kitchen’s rejection of restraint into the dining room.
A destination restaurant within an urban hotel.
Surreal, theatrical and deliberately irreverent.
Whimsical animal imagery and unexpected decorative gestures contrast with the precision of the dining service.
An expressive identity built around the XO name and Muñoz’s unconventional public persona.
