Julien Royer's contemporary French restaurant inside National Gallery Singapore combines precise technique, exceptional ingredients and a notably gentle visual identity. It is a defining reference for Singapore's internationally influential fine-dining scene.

    The Story

    Origin

Opened in 2015 by Julien Royer and The Lo & Behold Group, Odette takes its name from Royer's grandmother, whose cooking helped shape his approach to food.

    Philosophy

The restaurant makes personal hospitality and respect for ingredients central to a highly disciplined fine-dining operation.

    Why Important

Its international recognition helped consolidate Singapore's position as a destination for contemporary fine dining, rather than simply a market for imported restaurant brands.

    Differentiation

Odette pairs a major civic-cultural address with an unusually coherent relationship between cuisine, art, interiors and service.

    Food Philosophy

French technique anchors seasonal tasting menus, with ingredients and influences extending beyond France. Compositions favor clarity and balance over conspicuous complexity.

    Guest Experience

A carefully paced tasting-menu experience combines detailed tableside service with a calm dining room and views into the kitchen.

    Design Philosophy

A soft palette and restrained contemporary interventions temper the formality of the National Gallery's historic setting.

    Design & Architecture

    Lighting

Gentle ambient lighting supports the room's quiet atmosphere.

    Furniture

Upholstered seating and generously spaced tables emphasize comfort and privacy.

    Materials

Pale stone, timber, upholstery and metallic accents.

    Architecture

Located within National Gallery Singapore's former Supreme Court building.

    Design Language

Soft, contemporary elegance within a heritage institutional setting.

    Interior Design

Universal Design Studio created a restrained dining room incorporating artwork by Singaporean artist Dawn Ng.
