The global reference for hospitality.

The small Ginza sushi counter founded by Jiro Ono became a global symbol of culinary craftsmanship. Its concentrated format, exacting rice preparation and tightly paced service make it essential to Tokyo's restaurant history, although access is highly restricted.
Jiro Ono opened Sukiyabashi Jiro in Ginza in 1965. The restaurant's reputation grew through decades of specialist recognition and reached a much wider audience through the documentary Jiro Dreams of Sushi.
Progress is pursued through repetition and incremental refinement within a narrowly defined craft.
Few restaurants have shaped the global image of sushi craftsmanship as strongly. Its historical significance is distinct from ease of access or suitability for a typical visitor itinerary.
Its identity rests on unusually concentrated specialisation and a multigenerational commitment to a single culinary form.
Edomae preparation, fish selection, rice temperature and seasoning are treated as interdependent elements. Each piece is intended to be eaten promptly, at the moment selected by the chef.
An intimate, comparatively brisk omakase centres on successive pieces of nigiri rather than a prolonged sequence of theatrical courses. Access is highly restricted and should not be assumed to work like a conventional public restaurant booking.
The compact counter removes most distractions, concentrating the experience on the chef's hands and the sushi.
